Typically, Papua New Guinea is used in espresso blends to create a thick crema, so it’s rare to find one treated with the care of a single origin. This coffee takes the A/X grading variety and showcases its full potential through anaerobic fermentation. Its inherent rich texture is married with a caramel, sweet honey, and fruit-forward profile—a pleasant bitterness akin to dark chocolate is balanced by a natural sweetness. Growing at an altitude of about 1350 meters, our small agricultural cooperatives are based in Chimbu. More commonly known as Simbu, our farmers have generations of experience, only bring quality to your cup.

Our Simbu Papua New Guinea coffee is meticulously crafted through a sophisticated and refined process, designed for those who appreciate the art of coffee at its finest. Sourced from small agricultural cooperatives in the Simbu region, located at 1350 meters, this coffee is nurtured by generations of farmers who understand the importance of quality at every step. The A/X graded cherries are carefully handpicked at peak ripeness, ensuring only the best beans make it through. What sets our process apart is the use of anaerobic fermentation, a cutting-edge method that takes place in an oxygen-free environment. This allows the beans' natural sugars and acids to develop uniquely, creating a deeply complex flavor profile. The fermentation process enhances the inherent sweetness and fruit-forward characteristics of the beans, bringing out luxurious notes of caramel, honey, and vibrant fruit. Once the fermentation is complete, we roast the beans with precision, allowing their oils to emerge and intensify the flavors.
