The richness of Chiapas Espresso begins with its cultivation in the clay-rich soils of Chiapas, Mexico, at altitudes of 900-1000 meters. The unique soil provides essential nutrients like potassium and magnesium, which help develop the coffee’s balanced acidity and complex flavor profile. The moderate elevation allows for slow cherry maturation, resulting in a build-up of natural sugars and organic acids such as malic acid, which gives the coffee its crisp, cider-like acidity. The beans are hand-picked at peak ripeness and sun-dried, ensuring that only the highest quality cherries are selected and naturally sweetened during the drying process. The long, high-temperature roasting process brings out the full potential of Chiapas Espresso.
