Nestled on the Guatemalan border, this region is well recognised for its coffee production. Chiapas currently holds the crown for producing the best quality coffee in Mexico, producing approximately 40% of the country's total yield. Growing in clay mineral soil at an altitude around 900-1000 meters, passes its unique flavor profile to the bean. This unique flavor profile contains notes of chocolate, bitters, nuts, citrus, along with a round body and lasting finish making it the number one choice for the country. These Beans are roasted for a long time at high temperatures to facilitate the extraction of oils in the beans. This makes the flavor of espresso bolder, richer and more concentrated.

The richness of Chiapas Espresso begins with its cultivation in the clay-rich soils of Chiapas, Mexico, at altitudes of 900-1000 meters. The unique soil provides essential nutrients like potassium and magnesium, which help develop the coffee’s balanced acidity and complex flavor profile. The moderate elevation allows for slow cherry maturation, resulting in a build-up of natural sugars and organic acids such as malic acid, which gives the coffee its crisp, cider-like acidity. The beans are hand-picked at peak ripeness and sun-dried, ensuring that only the highest quality cherries are selected and naturally sweetened during the drying process. The long, high-temperature roasting process brings out the full potential of Chiapas Espresso. During roasting, the Maillard reaction and caramelization enhance the beans’ chocolate, nutty, and bittersweet notes while unlocking the oils that give the espresso its bold, concentrated flavor and smooth texture. The combination of careful bean selection, sun drying, and expert roasting results in a clean, balanced cup with a delicate body, lively acidity, and a lingering finish of chocolate and cinnamon sweetness.
