This full body cup carries notes of dark chocolate and ripe berries. Drying the berry on the bean introduces the aroma of fruit tea and butterscotch to the taste profile. The cup opens with a fruity aroma and finishes with a faint sweetness that sticks with you and leaves you wanting more. Antigua is well known for its 1200-1616 meter altitudes and rich soils, further differentiating this coffee from the rest. We only purchase the best beans from each region, making our smallholder farmers well distinguished. What makes them different? The way they collect, cultivate, and sun dry the beans, further increasing the savoury taste of these beans.

The richness of Guatemala Antigua coffee is rooted in its high-altitude cultivation and meticulous sun-drying process. Grown between 1200 and 1616 meters, the cooler temperatures slow the ripening of the cherries, allowing them to develop complex sugars and acids. This results in a coffee with vibrant sweetness and balanced acidity. During sun drying, where the beans remain in contact with the fruit, sugars and flavor compounds are absorbed into the beans, infusing the coffee with natural fruit and butterscotch notes. The controlled fermentation during drying enhances sweetness and adds depth to the flavor profile. The coffee’s bold, full-bodied flavor is further amplified by a long, high-temperature roasting process. This allows the Maillard reaction and sugar caramelization to develop dark chocolate and caramel-like flavors while extracting the oils that give the coffee its rich texture and concentrated espresso strength. These combined chemical processes create a luxurious, complex cup that showcases the skill of the farmers and the unique terroir of Antigua.
